Mix of Errrrthang

Hello there blog friends and friends who are not bloggers but are still my friends. <-- That was quite the intro. I'm typing up this post as I reflect on my weekend and what I still need to do before the work week begins (lunch prep -- chicken, peas, and celery.. sounds boring, I know). I was able to get in a little bit of everything -- a workout on Saturday and Sunday, some shopping (Ann Taylor Loft had an incredible sale), friend time, and catch up reading:

WWD (Women’s Wear Daily) is a Cosmetic/Fashion/Accessories trade news paper that is published each day. The office that I work in receives WWD daily, but there is never any time to read it! So I have began taking the papers home over the weekend to catch up. But don’t worry, I always bring ‘em back ;)

I also purchased Season One of ‘Girls’ — while I had seen a nice chunk of Season One, I wanted to be able to watch it whenever I have a chance. I’m definitely going to be purchasing Season Two as well, as soon as it is released on iTunes.

I have noticed that any female in their 20′s who live and work in New York City who watches this show either feels one of two ways about ‘Girls’. They either find it to be an accurate portrayal of trying to find love and make a life in this city OR that it’s completely ridiculous and shows a bunch of females running around having crazy careless sex. I happen to be in the middle of the road on this debate — and in the end, I really enjoy ‘Girls’. Much of of the show is quite relatable in terms of content and the situations that the girls go through — but some of it is kind of ‘out there’ and truly ridiculous.

After watching a few episodes of ‘Girls’ on Saturday evening, my friend Alyssa came over and we got ready for a night out. We bar hopped throughout Chelsea, the West Village, and the Meatpacking District. It was quite a fun night! I finished off my evening with two delicious garlic knots :) Garlic + bread = amazeballs.

Chobani Bites

Hi there, everyone! We have made it through Monday and Tuesday and now we only have three more days to go before the weekend. I already have some plans for Friday and Saturday so I am definitely looking forward to these next few days hopefully flying by! One thing that’s been getting me through the week? The Chobani Bites yogurt that Chobani sent to me last week! Chobani Bites have only 100 calories and are packed with flavor and protein — score for sure :)

I received quite a plethora of flavors! Coffee & chocolate, fig & orange zest, raspberry & chocolate, and caramel & pineapple. I have to say, being the chocolate and coffee lover that I am, this flavor is definitely my favorite. These make great snacks before the gym, or as a nice breakfast when paired with some fruit and a little sprinkle of cereal.

A Wonderful Weekend

Hey there, everyone! How has your weekend been? It is still so, so, so cold here in New York City and quite frankly, I am totally over it. However, I had a beautiful weekend filled with volunteering, gym time, family time, and a night out with friends. Saturday morning I volunteered with New York Cares helping those who are disabled walk around Central Park. I had the honor of working with a blind gentleman for about two hours — we walked and talked about everything! Working out, traveling, and life in general. It was a humbling and wonderful experience and I plan to participate again this week!

Saturday evening was a lot of fun as I went out to a couple of nice bars with my friend Eva. One of her friends was having a birthday party so we went downtown to a place called Pravda and then made our way to the Empire Hotel which is a roof top bar that has beautiful views of the city. We rounded out our night by meeting up with my friend Alyssa at my apartment and girl-talked our way through some 2:00 AM pizza. Yummy and worth it.

What was really nice about this evening was that I felt no guilt! No guilt for having a few drinks, no guilt for indulging in a slice of late night pizza – no guilt whatsoever! It probably helps that I have been working out every single day (I usually workout 4-5 days a week, but never every day!) and have been eating really well, but either way, I truly enjoyed the entire evening! It was a very refreshing feeling.

Today began with a quick workout and then exploring some awesome exhibits at The Met with my mom. Such a nice mommy-daughter day!

And with that, off to watch some silly reality TV. I may never give reality TV up! Enjoy the remaining hours of your weekend, my friends :)

Bad Blogger

Guys, I think I have been a pretty lack-luster blogger lately. These past few weeks my head has really been at work and then when I am not at work, I have been at the gym. I know that you all know how those weeks go – in ebbs and flows – and I am not going to post anything of importance or of earth-shattering content at this very moment. So I hope you can all bare with me a bit and I am sorry if I have been disappointing you over the last week or so with my shitty posts.

But this is life right? Some weeks you’re on like donkey kong and the other weeks you don’t have jack shit to write about. So it is what it is and for right now in my spare time I have really been enjoying Pinterest for the pure pleasure of looking at pretty images, sayings, and recipes that I will probably never re-create. Hi there and welcome to another WIAW! I am going to go out on a limb here and pat myself on the back because I think yesterday (Tuesday) was filled with healthy and delicious eats. Thanks as always to Jenn for throwing this lovely party together.


I ate my breakfast around 8:00 AM and switched it up a little! It was totally worth it to break out of my normal breakfast routine — generally speaking I always gravitate towards egg whites with toast or some fat free greek yogurt with berries. This morning? Fiber One pancakes! I topped my pancakes with a lot of little sunflower butter and jam. Changing things up a little bit with the pancakes was great — made my morning feel a little more special :)

This kept me full until around 1:00 when I had lunch. Last night, I prepared some already marinated chicken (Trader Joes) which had a lot of spice and kick — very yummy. I like prepping big dishes, as you all know, on a Sunday or Monday evening so I can have the meal throughout the week for lunch. With my chicken, I had a bit of avocado, some butternut squash, and low fat sour cream. This was also a little different from the average stir fry/salad/soup that I bring to work.

To round out my lunch, I had three mini clementines. They were amazing, by the way – so full of flavor.

At about 4:00 I was just craving a snack so I had a granola bar. Definitely wasn’t hungry, but whatever. Once I got home at 6:00, I hit the gym at 6:15 and then my room mate, Britt, met me at the gym at around 6:45 and I gave her a training session until 8:00. The session went so well! Well, I guess you would have to ask Britt (haha) but still, I felt like I was able to really help her get into the groove of working out without killing her — success!

Once we were back in our apartment, we were both starving. I opted for a light salad of avocado (cannot get enough) and light cheese as well as a side of these little fat free jalapeno crunchy chips I purchased at Trader Joes. They’re probably not that great for you but I certainly enjoy ‘em!

Now I have a question for you guys! Do any of you know — or do any of you — personal train on the side? Do you have a full time job and some how manage to have clients in the early morning/evening/weekends? I am still dabbling in getting my PT certificate but would love some advice from those who already have a full time job. If you know of anyone or if this is YOU, can you please give me some pointers? I’M BACK!

Hi, everyone! I am officially back from my business trip to Milan. It was a week of non-stop work, go-go-go, and dinners (which were of course very delicious!). Unfortunately during my week there I was a bit on the sick side :\ extreme congestion, the chills, bad cough, etc, but I totally made it through with success and I am so glad with how well the week went.

I am excited to get back into the gym and healthy eating routine today, though. Between not feeling well and having early days/late nights while in Milan, I was only able to take advantage of the hotel gym for legitimately 30 minutes. Ready to get back into the routine now that I’m back!

I posted a few pictures on Instagram throughout the week (@StephSkork) but incase you don’t follow me (you should!) here’s a glimpse at what I was able to capture throughout the week — when I wasn’t at work, which was where I was most of the time! It was a business trip, after all.

Goodbye NY, Hello Milan

Hey all! How are you on this fine Thursday evening? I’m doing pretty well over here.. I have been busy because I have been getting ready to travel for work — to Milan! Yes, you heard me correctly — I am going to Milan, Italy for work this Saturday. I have actually been lucky enough to travel to Milan for work twice prior to this trip, but I am definitely looking forward to landing in Europe on Sunday morning (I am taking an over night flight).

So for now, I am going to say goodbye to you for a few days and leave you with some of my favorite and most inspiring Pinterest images as of late. I am going to be incredibly busy while in Italy, and I don’t want to stress myself out to write up a post here or there. Good morning, everyone, and happy What I Ate Wednesday! I’ve had a pretty good week of eats so I thank Jenn for letting us share our meals, sips, and snacks with you! Here’s what a day in the life of (some) of my eats has looked like:


Breakfast has been a lot of egg beaters with a slice of soy american cheese paired with a 45 cal low carb wrap which I eat with a little sunflower butter and fig jam. I usually have this around 8:15 and it leaves me full until 1:00.

Then 1:00 comes and BOOM! time for lunch. I always like to have filling, non-heavy, super healthy lunches. So this Sunday night I decided to make a batch of ground turkey (99% fat free) with asapargus and edamame. Now I have this meal for a majority of my lunches throughout the week. It is a really delicious, simple, and clean meal. Love it.

Snacks have been coming in very handy — especially since I have been so busy lately — and thanks to Cascadian Farm who sent me an AMAZING package — I have been snacking on some delicious granola bars. I have also been snacking on pineapple, green juice, and almonds. All clean eating and all filling. Anyway, I can’t thank the people at Cascadian Farm enough, they’re truly awesome.

Dinner’s have been light salads or soup after a workout. I’ve been doing pretty well with workouts and on SOME day’s I have been enjoying ‘two-a-day’ workouts… about 35 minutes in the morning — mixed cardio and abs — and then in the evening I will take a class. Since I get out of the class around 8:00 and don’t have dinner ’til 8:30 or even 9:00, I’ll have something that looks similar to the below:

And I always have something sweet after dinner! Whether it’s some cool whip with sunflower butter or something along those lines.

That’s about all I have for you on this fine Wednesday — tomorrow’s already Thursday, woo! Hope you make it a great one :)

Alcorexic

The other day after work, a few co-workers and I were speaking about the topic of ‘alcorexia’. If you haven’t heard of alcorexia or being ‘alcorexic’, it’s basically a condition where a person will starve him or herself throughout the day in order to save his or her calorie intake for the evening–beers, wine, etc. This is something that is primarily seen amongst women, as we try to consume the least amount of calories but still want to go out to have a good time with friends at night.

I kind of used to partake in this sort of activity back in my eating disorder days. Still, to this day, if I know I am going to be having a few drinks at night, I try to keep my fare maybe a little cleaner and lighter during the day, but I by NO means survive off of a half cup of cottage cheese or a salad of…. lettuce. Not at all. Those are some of the habits I used to live by.

I’m going to put myself out there once again on this blog and show you a picture of before during my eating disorder when I would go out at night with friends and after. The after is actually a picture from last week so this is as real as it gets.

Before, I would consume as little as possible, workout extra long–knowing that I would be burning more calories since I’d be going out that evening, and try to just avoid food at all costs.

I don’t think I look too bad in the above picture, but I don’t look great. I’ve seen much much much worse pictures of myself — and the above is actually a photo during the days where I was trying to recover and have fun. I can look at that picture and know that I was trying. But then, I look at the below picture, the ‘present day’ picture, and know that this is the Stephanie who is truly recovered.

Generally speaking, I’ll have a couple drinks about twice a week on average. Maybe once during the middle of the week and the once over the weekend. I do try to keep it to a sort of happy medium because alcohol makes me bloated, but at the same time, it’s so nice to grab cocktails with the girls after work or have a drink when I am out at dinner. There are weeks where I don’t drink at all–and I tend to really like that.

However, I will never starve myself again over the fear of consuming my calories through alcohol. It just isn’t worth it. It’s more worth it to be able to find that happy medium of, ‘okay, I’ll have a really healthy and filling lunch so that I’m not starving at happy hour and down those fries’, instead of avoiding food to be able to have a few glasses of wine. You have to learn to go with the ebbs and flows. I’m still learning.
